About the Recipe

Why not try nuts and save an animal in the process?! These meatballs are great on pasta, wraps, stuffed peppers, stuffed mushrooms, or stuffed zucchini!


  • 1 1/2 cup walnuts

  • 2 cups cooked brown or green Lentils

  • 1 tbsp avocado or grapeseed oil

  • 1 tsp salt

  • 1 tsp cummin

  • 1 tsp thyme

  • A dash of hot chili or cayene pepper


Step 1

Warm oven to 380 F.  Mash lentils in a bowl.

Step 2

Blend walnuts in a blender and "crush" them (don't overblend to powder - keep small pieces of walnuts).  Add to lentils.

Step 3

Add all other ingredients to bowl.  Mix with fork.

Step 4

Form balls and warm in the oven (380 F) on a baking sheet for 10 - 15 minutes.

Lentils are a good source of protein. Walnuts contain omega-3 and antioxidants which helps to enhance cognitive brain function and prevent disease.
